Avocado is a great source of vitamin E which we need to protect ourselves. Plus, they are high in unsaturated fats which help to reduce heart disease and lower cholesterol levels. Take one avocado, cut it in halves and remove the seed. Scoop out the flesh with a spoon. You will need one half of avocado for one portion.
Place 1 slice of rye bread into the toaster. Mash one half of avocado with a fork and spread the mash on the slice of toasted bread.
Take a handful of rocket, season it with some salt and ground black pepper. Squeeze some lemon juice. Place the rocket on your toast.
Then, cut 3 cherry tomatoes in wedges and place them on your bread.
