Get your big pan nice and hot and add 700 g of fresh cherry tomatoes, whole. Char and blacken skin of tomatoes. Then, split 3 chillis in halves, take out the seeds and add to your tomatoes. Char for more 3 minutes. Then, remove tomatoes and chilli from the pan, put into the bowl and cover with a towel.
Take a big bowl and add 2 tablespoons of garam masala. Then, add 8 cloves of grated garlic, along with 20 g of grated ginger. Season it with salt and pepper and add 2 tablespoons of natural yogurt. This is a great marinade for chicken.
Take 4 chicken breasts and score them for the marinade to penetrate better. Cover your chicken with marinade.
Into a hot pan add some olive oil and place your chicken to fry until nice and brown for 8-10 minutes. When cooked remove from the pan.
While your chicken if frying, remove skin from your chillis and tomatoes.
Place your tomatoes and chillis into the pan and add a tablespoon of cashew butter. Then, add 500 ml of boiling water and squash all the tomatoes. Let it boil for 2-3 minutes.
Cut your chicken into large chunks and place into the sauce. Let the chicken simmer for 5 minutes. finally, add some natural yogurt and fresh coriander.
You can serve this delicious chicken with boiled rice.
