It starts with a big pan on a high heat. Take 40 g of spring onions and finely slice them. Precook the rice for 10 minutes.
As the pan gets nice and hot, add 1 tablespoon of olive oil. Place your onions into the pan.
Then, add your precooked rice into the pan and mix it with onions.
Next, add 2 teaspoons of chilli jam and mix. Then, add 50 ml of water. At this stage push the rice up the side of the pan. And then, straight into the middle crack in 2 eggs. Mix whites and yolks in the pan and tire in 150 g of tofu.
Next, give that a good mix and season with a pinch of salt and black ground pepper.
