Firstly, start with chocolate. Good chocolate is really important in this dessert, take 70% cocoa solid chocolate. It can taste a little bit bitter, but in the brownie, when you mix it with butter, and sugar and all the other ingredients. 250 grams of chocolate goes into the bowl. Place the bowl on the simmering pan.
Then, take 250 grams of good-quality butter. Dice up the butter and get it into the bowl. Very gently, melt that bowl. Add a pinch of salt.
Next up, sugar and eggs. Crack 4 eggs into the bowl, add 250 grams of golden caster sugar. Whisk up the eggs and the sugar, until the sugar is fully dissolved. As you beat it, it goes pale, fluffy and light. Then, add 2 tablespoons of self-raising flour and 2 tablespoons of cocoa powder, use a little sieve to add it to the eggs. Fold the mixture, do not beat it.
Add your melted chocolate with butter to the egg mixture. Very gently fold it.
Take a cake mold and gently pour your brownie mixture into it. Place it into the oven for 25-30 minutes at 180 C.
