For this dish you will need a whole chicken. First, put 300 g of kimchi, along with 100 ml of water into a liquidizer. Next, add peeled thumb-sized ginger, it goes in with the water. Then, add 2 tablespoons of olive oil and 1 tablespoon of white wine vinegar. Whizz that up.
Add 1/3 of the marinade into the baking tray. Place your chicken into the tray and cover it with the marinade. Next, add 100 ml of water and place your chicken into the oven at 180 degrees C for 1 hour 20 minutes.
Then, make the glaze for your chicken. Add 3 tablespoons of marinade into the bowl, then, add 2 tablespoons of honey. Give that a mix.
Toast 150 g of sesame seeds at high heat until golden.
Cover your chicken with the glaze and generously sprinkle toasted sesame seeds.
