Get your pan nice and hot, add some olive oil. When the oil starts sizzling, add your minced beef. Then, add 1 teaspoon of rendang curry powder. Cook for 10 minutes.
While the beef is cooking, cut your cauliflower in 2 halves. Take one part, and cut florets, make nice little chunks. Place the florets to the pan to cook with the minced beef. Cook for more 10 minutes, giving it the occasional stir. In 10 minutes add tinned coconut milk and 100 ml of water. Give it a nice little stir. Cook for more 5 minutes. Add some mint leaves.
Use the second part of the cauliflower to make rice. Place the cauliflower and mint into a food processor, add some salt and blend. Then, get it into a heat-proven bowl and cover it with some cling film. Place the bowl into the microwave oven for 5 minutes.
