For this dish you will need a griddle pan with a heavy lid. Make sure that the sirloin steak is about inch and a half thick. First up, rub this steak with a little olive oil. Then, season it quite generously with pepper.
Preheat the pan for 4-5 minutes. Make sure that the lid is as hot as the bottom. Put the steak on the griddle and put the lid on top.
After a couple of minutes, turn your steak, so you get nice crisscross bar marking. Cook for more 3 minutes.
One minute before you get your meat off the griddle, mop it up with sprigs of rosemary and thyme. It does make sense, it will give the steak a nice shade of flavor.
Put the steak on the plate and let it rest for 1 minute. Then slice the steak, season it with salt and serve.
